Only old durum wheat varieties, such as Russello, Timilia, Sicilia, and Cappelli are used to make our pasta. Our semolina, flour and pasta products are made with a single variety of wheat. All of our wheat is produced in Italy. As regards the production process, most of the pasta factories that work for Taino use artisanal methods, with longer production times and lower cooking temperatures that retain the product’s nutritional qualities and give it a somewhat coarse look. In fact, if our pasta looks different from other pasta products commonly found on the market and somewhat whitish in color, this is because it is produced at low temperatures, and no plastic materials are used to cut it.
