Wheat Flour (Italian “type 1”)



At Taino, we promote the use of old varieties of wheat. At present, we use varieties that are from the 1970s, and lately we have been reproducing even older varieties of wheat, such as Gentil Rosso, Belvedere, and Rieti.
We do not sell any superfine flours, as in these flours many nutritional components of wheat are lost along with the removal of important parts of the wheat grain (i.e. the ones that contain fiber); superfine flours are also heated during milling, which compromises the quality of the end product.
The older wheat varieties found in our products may have a lower protein content than modern wheat varieties.
